I took a two day/one night tour to Halong Bay. We spent the time on a junk. We explored a cave (not very impressive), went kyaking, and went swimming during the first day. The second day was more swimming and enjoying the bay. It was very relaxing and the first time in a long time that I've been able to see stars at night! (Also the first time I've slept on a boat.)
